The two-for-one T-bone cut containing the strip loin on the larger side and the tenderloin on the smaller side is a favorite among steak lovers who like a little chew on their meat. Our T-bone (Steak) assures a fun and versatile meal, with the buttery tenderness of the tenderloin complementing the grainy and pronounced beefy flavor of the strip. The meat is harvested from American Buffaloes raised by local ranchers between Colorado and Wyoming. The animals are fed on grass in a healthy, ethical environment without the use of antibiotics, steroids or growth hormones. Our master butchers employ artisanal butchering techniques to carve aesthetically balanced portions that cook uniformly well and look great.
