Buying whole is probably the best way to buy chicken. Unlike red meats, where every cut can be distinctly differentiated, chicken has very few such drastic changes in type and taste over different sections. Also, parting and portioning a whole chicken will at most take about ten minutes of knife work. Grilling and roasting a whole chicken is something that is a complete joy not just to eat, but also to prepare. The most important reason to buy the bird whole? Cost. Whole chicken is almost always cheaper than specific cuts. What better way to enjoy the all-natural, free-range chickens than whole?
