Secured from the beef tenderloin’s smaller end, the Filet Mignon is touted as the ‘King of steaks’, owing to its superior flavor, tenderness, and juiciness in each bite! The cut is secured from the short loin found in the back ribs, which is not toughened by exercise thereby making it supremely tender. The marbling is just sufficient and brings out the flavor of the meat when cooked. We raise our Angus beef in exclusive reserves, without antibiotics or hormones, and take care to dry age the meat cuts about 21 days until the portioning, so it has superior tenderness and flavor!
